One of our favorite winter mushrooms, hedgehog mushrooms thrive in the frosty weather of the winter month, fruiting in the Oregon mountains just below the snow line. Called hedgehogs because of the delightful, 'sawtooth' texture of their undersides, hedgehogs have a delectable, sweet, nutty flavor that is similar to chanterelles. (Some people have even told us that they love these mushrooms even more than flavorful and famous chanterelles.) Always cook wild mushrooms before eating.
