For over a century, this deliciously unique cheese has won the hearts of locals and visitors. What is a fresh brie? This cheese uses the same recipe and the same artisanal cheesemaking process as our other brie varieties but skips the aging room. The result is a fresh cheese that lacks a bloomy white rind and has a tangy flavor and slightly springy texture, reminiscent of cheese curds. Petite Breakfast brie has a rich history, originally created as a protein-packed alternative for gold miners turned Bay Area dock workers in the late 1800’s. As the Gold Rush waned and the San Francisco Bay Area experienced a population boom, the demand created a locally legendary egg shortage.
