After four plus years of en tirage aging on the lees this wine is ready for your sparkling flutes, coupes, or wine glasses. We took extra care to disgorge the precious lees employed during aging to clarify the finished wine and now it's waiting for your special dinner. Our Impetulance Pétillant Natural style wines are all given five days of skin contact prior to pressing to enhance color and flavor then allowed to ferment naturally in stainless steel. The grapes for this vintage were sourced from Dineen Vineyard near Zillah where they were raised with the potential to evolve into a complex wine with tropical fruits flavors of mango and lychee that finishes with the essence of apple and melon.
