Third-generation coffee farmer Josué Ariel is shaping the future of Honduran coffee from his farm, Finca Las Flores, in the San Sebastian region of Comayagua, Honduras. What began as a family tradition has become a platform for innovation - a place where new methods, varieties, and ideas take root.  At 1,650 meters above sea level, Josué cultivates a handful of coffee varieties across 4.9 hectares of land in the village of La Penita, Honduras. This particular microlot -  made up of naturally processed Catuai and Lempira varieties that are dried slowly on solar beds and nylon - is recognized for its honey and fruit aromas balanced by a lasting juicy body.  Continuous improvement drives every decision at Finca Las Flores. Josué has upgraded his fermentation systems and added dedicated drying spaces for natural coffee.
