Onion Scapes

An onion scape, also known as a garlic scape or green onion top depending on the context, is the long, slender, green shoot that emerges from the bulb of an onion plant (Allium cepa) as it grows. Typically harvested before the plant fully matures, the scape is a tender, edible stalk with a vibrant green color and a mild, slightly sweet onion flavor, less pungent than the bulb itself. It often appears curled or twisted in young plants, especially in varieties like green onions or scallions, and is rich in vitamins C and K, as well as fiber.
