Each June and July we sustainably harvest mesquite pods from wild trees growing on our regenerative farm. Two native varietals, Honey Mesquite (Prosopis glandulosa) and Velvet Mesquite (Neltuma velutina), are milled together to create a flour that reflects the diversity of the desert itself. These ancient trees have nourished the Southwest for thousands of years. Indigenous peoples once gathered millions of pounds annually, sustaining life in an arid landscape. We follow their lead, harvesting respectfully and taking only what the trees freely offer while leaving ample pods for wildlife and natural regeneration.
