WHAT IS WHITE SONORA WHEAT?Classification: Heritage soft winter wheat. Introduced by Spanish missionaries to Mexico and southern Arizona, White Sonora was grown extensively by the native Akimel O’odham in Arizona. It is believed to be the first wheat introduced to the New World over 300 years ago. Wheat Berry Use: Wheat berries have a variety of uses in cooking and baking. Home-mill for fresh flour to use in breads and baked goods. When cooked whole, they have a nutty flavor and a chewy texture, commonly used in salads, soups, or as a side dish.
