The original fajita cut — and still the best one. Skirt steak is thin, loose-grained, and loaded with more beefy flavor per square inch than just about anything in the case. It loves high heat and a fast cook: get your grill or pan screaming hot, give it a couple minutes per side, and let it rest. Slice thin against the grain and it's tender, juicy, and impossible to stop eating.
