From Italy, this intense, full-bodied pasteurized cows' milk cheese is dense in texture. As it matures it acquires a sweet, rich flavor which can be considered a delicate version of Parmigiano-Reggiano. Its character imparts a smoother texture and depicts nutty undertones. Aged for at least 1 year, this is a perfect table cheese that is also delicious grated onto pasta, shaved over mixed greens or used in pesto as an alternative to the traditional Parmigiano.
