Now, he’s a an eccentric winemaker in an eccentric place: the tiny volcanic island of Pantelleria. The island is famed for two things, its capers and the beautiful wines made with the local Zibibbo grape. Vinification method: Bini’s grapes come from old vines planted over ancient terraces on the island’s volcanic soils. Higher than most vineyards, Serragghia experiences a cool sea breeze and moderate temperatures, even in peak summer. For this wine, the grapes come from sixty-year-old bush vines planted on one of the highest parts of the island. The wine macerates for seven months on skins in terracotta amphorae from Spain, which Bini buries in his vineyard. It's then bottled unfined, unfiltered, and with no additional sulfites.
