GRAPES: SAUVIGNON BLANC SKIN CONTACT: 15 DAYS REGION: STYRIA, AUTSRIA Producer information: Sepp and Maria Muster are a winemaking couple who are known in the wine industry as pioneers of biodynamic agriculture. The couple’s winemaking philosophy is heavily rooted in respect for the earth, soil, and nature - to trust it rather than overrule it. They work on a 10-hectare family estate in southern Styria, near the Slovenian border, with a philosophy of “less is more." Vinification method: The grapes are hand-harvested and partly destemmed. They are fermented in 2400-liter wooden casks with indigenous yeast. The grapes macerate on the skins between 2 and 4 weeks before they are transferred to 2400 and 1200-liter oval wooden tanks for about 23 months.
