Grapes: Chardonnay 45%, Sauvignon Blanc 45%, Muscaris 10% Region: Styria, Austria Skin Contact: 150 days Producer information: Ploder-Rosenberg produces the Archaic wines made from amphoras based on their feeling. They search for the element of spirit in the wines. They are mostly fermented in qvevri. The process is very manual and based on the character of each element of the wine. Percentage as well as varieties may change between vintages. Also, it is not possible to make these wines every year (as they need to be the highest quality) so basically, they make amphora wines three to five times per decade. Vinification method: Macerated for 120-365 days, then sits on fine lees in egg-shaped clay amphorae for 12 months before bottling.
