Besserat de Bellefon Champagne Extra Brut Cuvee des Moines

A clear, brilliant straw yellow colour with copper highlights. The delicate, persistent bubbles forms a delightful, creamy bead. The nose is sharp with mineral notes and a hint of citrus.  Iodine and smoky toasted notes are revealed as the champagne breathes, and the result is pure elegance.  Initially it is fresh in the mouth, and the well-defined structure reveals a charming tartness. The fruit notes are pear and quince.  The finish is refreshing, persistent, complex and refined.
