Sofia is fresh goat curd placed into molds and dusted with vegetable ash. The ash helps to reduce acidity and allow the bloom of the rind to grow. After about 10 days a downy white coat appears over the black ash and they are ready to be shipped. Sofia is a delicate cheese with a fluffy texture and lemony tang. This will be excellent with a crisp white.
