The leaves are bright green and the stems vary in different shades pink!  They look and taste like Microgreen Beets and can easily be substituted for beets. It contains 3 times the recommended daily intake of vitamin K and 44 percent of the recommended amount of vitamin A. This vegetable can help to combat cancer, reduce blood pressure, and enhance performance in sports.  Add them to salad, atop soups, on sandwiches, as a garnish for cooked dishes such as fish and meat, add to smoothies, or eat alone as a snack!
