As an alternative to the flank, the skirt steak is great for a marinade and grill. Skirt steak has an even more intense beefy flavor than flank steak, but can contain more tough muscles, so is best cooked to rare or medium rare. This cut is primo for fajitas and makes the best steak salads sliced thin across the grain.
