This product is made from select Butcher Hogs. The skirt meat is removed first, then the Spare Ribs are cut lengthwise to cut the Brisket Bone off. By doing this to the Spare Rib, the St. Louis Rib is in the shape of a Back Rib. Each piece is weighed and individually wrapped then frozen. Our meaty St. Louis Ribs are very tender, perfect for dinners and appetizers.
