THE BARREL PROJECT W/ STILL AUSTIN

The Barrel Project marks the first of what we hope will be many collaborations between Palace Coffee and Still Austin Whiskey Co. Still Austin’s founder, a longtime friend of Palace who spends part of the year in Amarillo, helped bring this idea to life. The project began with our Wholesale Trainer traveling to the distillery in Austin to pick up a freshly emptied whiskey barrel. We filled it with a Tanzania coffee and aged the beans for 30 days, rotating them weekly so every batch made full contact with the barrel. The result is a full, rich coffee with an unmistakable bourbon aroma and layered flavors of boozy sweetness, smoked pecan, and orange peel. It’s a slow sipper, best enjoyed with good company or on a quiet morning.
