The lotus root (renkon in Japanese) is a root vegetable that when cut reveals holes and can be prepared in many ways.  A simple recipe I learned from my mother is to thinly slice and stir fry with a dash of mirin, soy sauce and togarashi (red chili).  15mm x 7m made in japan
