Peru - Geisha
This prized Geisha comes to us from Ronal Carranza Montenegro’s farm, Guardián del Bosque, located high in the mountainous area of Gracias a Dios, in the Amazonas region of Peru. This unique lot underwent anaerobic natural processing methods by fermenting for 72 hours in closed drums while still being in its natural state. Once the fermentation was complete, the beans were dried using direct sunlight for a limited amount of time and then finished drying under a solar tent for 15 days. We lightly roasted our Peru – Geisha resulting in a vibrant and delicate tea-like body with notes of lemon custard, lavender, and dry white wine.
