The St Augustine Standard Top is preferred by back sleepers. For those that want a firm mattress without sinking into it much. But its nice and Medium firm, not hard.   The St Augustine Pillow Top is the plush version. Notice that we say Plush not soft. We say plush because the Pillow Top ads plushness to the St Augustine without compromising firmness. So yes you can have the best of both worlds. A Medium-Firm and supportive plush top mattress.  And Yes it is Double Sided. You can flip both the Standard and the Pillow Top versions. The mattress is identical on both sides.
