Yacon is a species of perennial daisy traditionally grown in the northern and central Andes from Colombia to northern Argentina for its crisp, sweet-tasting, tuberous roots. Also known as Peruvian ground apple, Yacon has a similar texture to jícama. The tuber is composed mostly of water and fructooligosaccharide. Hardy in Zones 5 to 10, but it will produce in cooler climates with just fewer tubers. This is a wonderful, hardy food forest tuber.
