Before use, it is important to soak and soften the dried scallops in hot water for 30 minutes so they start releasing their flavors. Smaller sized dried scallops are best for soups or congees while larger ones can be served whole. Dried scallops is one of the main ingredients that goes into the much loved Hong Kong condiment, “XO sauce”. Some even eat them dry like seafood jerky!
