Soppressata Stracciatella

Stracciatella is magical. It's burrata cheese filling (shreds of creamy mozzarella and cream). On a hot pizza it melts into little delicious cheese pools! But the absolute best thing about this particular cheese is that it's made by Belgioioso using milk from our family farm. I paired the Stracciatella with some thick shaved spicy Soppressata made with Calabrian chiles (from the toe of Italy's boot). It's a fatty and flavorful pressed and cured dry salume. I know there are a lot of big Italian 'S' words in the name. But don't be scared. It's so elegantly cheesy with crispy spicy meat bits. This is perfect for anyone who thinks they only like "normal" pizzas.
