Soppressata Stracciatella - Gluten Free

Stracciatella is magical. It's burrata cheese filling (shreds of creamy mozzarella and cream). On a hot pizza it melts into little delicious cheese pools! But the absolute best thing about this particular cheese is that it's made by Belgioioso using milk from our family farm.  I paired the Stracciatella with some thick shaved spicy Soppressata made with Calabrian chiles (from the toe of Italy's boot). It's a fatty and flavorful pressed and cured dry salume. I know there are a lot of big Italian 'S' words in the name. But don't be scared. It's so elegantly cheesy with crispy spicy meat bits.
