Pops' Pepper Patch Pickled Baby Beets

Size: 16oz Pops' Beet Salad w/ Lemon Vinaigrette1lb of Pickled Baby Beets or Beet Bombs, chopped1 cup English Cucumber, chopped5 Green Onions, sliced thin1/2 cup Carrots, shredded1/2 cup Yellow Pepper, chopped1/2 cup Shallot, chopped1/4 cup Radish, chopped fine3/4 cup Fresh Parsley, chopped fine3 tbsp Olive Oil3 tbsp Fresh Lemon Juice2 tsp Lemon Zest1 Garlic Clove, minced1/4 tsp Sea Salt, fine Make the Lemon Vinaigrette first by combining and whisking the olive oil, lemon juice, lemon zest, garlic, and sea salt.
