
Attack of the Butterfly Dragons- Apple and Red Wine Coferment
6.8% ABV, 750mL For our third year of experimenting with the wine grapes growing in front of our cidery, we present Attack of the Butterfly Dragons, a co-ferment of apples and Pinot Noir, Cinsaut, and Barbera wine grapes. We took apples from four local historic orchards and aged the cider in ex-whiskey, ex-Petit Sirah barrels for 16 months. While the cider aged, we took the '24 crop of red wine grapes from our cidery (dry farmed & spray free) and gave them a month of carbonic maceration, then we pressed the grapes, and blended them with the cider for a gorgeous, dry, sparkling rose that's perfect for summer. Think wild strawberries, oak, and subtly smoky herbs with juicy bubbles and tannins that make it the perfect pairing for BBQ.
