Domaine Lesuffleur - Friardel Poire de Normandie
Domaine Lesuffleur's Friardel Poire de Normandie is a famed French Perry made from pears grown on a single 200+ year old tree on the Lesuffleur family's estate orchard. The Grises des Lisieux is a native heirloom pear variety to the Pays d'Auge area in Normandy. Like the pears from which it's made, this perry is extremely rare. Only a couple cases make their way to the U.S. and we were only able to secure a few bottles. This may be the chalkiest and most complex of all Benoit Lesuffleru's ciders. It is very crystalline and bright with a kind of psychotropical-peariness. The perry is keeved, a traditional french cider making process that naturally filters the perry, builds a soft carbonation, softens tannins, and halts fermentation before it's completed (resulting in some residual sugar). The acidity, tannins, and structure from the lees gives the perry a drier impression despite the residual sweetness. A note on the cost & the fame of this Perry: while this perry is exceptional,
