Eden's Specialty Cider's Cinderella's Slipper is as natural and low-intervention in process as possible, and a true "taste of place". Made with a blend of several cider apple varieties grown on their home orchard, this cider is spontaneously fermented with natively occurring wild yeast living on the fruit. No additives, racking, or filtering. Bottled still with no added carbonation. The cold climates of Vermont means the fruit has lots of acidity, and the fermentation in the colder month of October results in a low & slow fermentation that preserves a lot of the fruit flavors.
