Eve's Cidery - Perry (750 mL)
Eve's Cidery's Perry is a naturally sparking perry made from a blend of biodynamically grown perry pears from their estate orchard (20% of the blend), and wild pears foraged in the hills and valleys surrounding Eve's home region of the Finger Lakes in Upstate New York (80% of the blend). Naturally fermented using the wild/native yeast living on the fruit and in the cidery. Primary fermentation occurs in stainless steel and neutral oak. The perry is then blended and bottled, with a secondary fermentation occurring in bottle for a natural sparkle. Each bottle is hand disgorged in the Traditional Method (a.k.a. Method Champenoise). We've been enjoying Eve's Perry for years, and each year/vintage this perry comes together in a unique way. The wild pears used in this 2024 vintage (year the fruit was grown and harvested) had a variable harvest. Spring frosts from that year seemed to have affected some trees completely and others not at all. This perry drinks bone-dry. About Eve's Cidery:
