Madrone Cellars' Salish Trio is a sparkling cider made from a blend of organic San Juan Island grown pears, apples, and quince. The blend includes 45% Shinko Asian pears, 25% King apples, 23% Blue Pearmain apples, 4% quince, and 3% crabapples. Stainless steel fermentation. Bottle conditioned. This cider is dry with medium-to-plus acidity and a light tannin profile. The flavor notes are quince forward, with a bouquet of supporting flavors including floral notes, lemon zest, fresh apple skin, pear, soft notes of pastry dough, and lingering minerality & spice notes. Try this cider side-by-side with Madrone's The Isle - a piquette style ciderkin made by rehydrating the pomace (leftover fruit pulp) from the Salish Trio. The rehydrated fruit is then pressed for a second "juice" blend that is fermented into a light, refreshing ciderkin. Madrone Cider is based on San Juan Island in Washington State.
