Oliver's Cider & Perry - Cheddar On My Mind #3

Oliver's Cider & Perry's Cheddar on my Mind (Batch 3) is a succulent, juicy cider with noes of orange citrus. Made from a blend of some of the finest English cider apple varieties including large amounts of Yarlington Mill, a dash of tangy Foxwhelp, and blended with barrel aged Michelin & Bisquet ciders for extra depth. Tasting Notes: This cider drinks slightly off-dry, with medium-plus acidity, and softer medium-minus tannins. Nearly still, just the softest bit of bubble. Flavor notes of apple skin, bittersweet juice, lemon & lime, light lees, and a rhubarb like sharpness. Paired with a fine farmhouse cheddar, the sharpness mellows and the citrus sings with a lovely lemon-lime note.  Great on it's own, but definitely worth pairing with farmhouse cheeses!
