Hanger Steak Hanger Steak (also referred to as Hanging Tender) is a very tender cut with full flavor and a coarse texture. Due to its texture, hanger steaks are best marinated and cooked to no more than medium doneness. Found in the Plate Primal region, this cut is unique in that each cow only has one as opposed to a matching pair. The hanger steak comes from a muscle that helps support the diaphragm between the ribs and loin and gets its name because it just “hangs” there.
