As the fruit ripens, the skin turns green to golden yellow. The flesh is cream-colored with a central core and a few, small dark brown seeds. The flesh is crunchy and tart when under-ripe. Ripe bartlett pear has a buttery texture with a sweet juicy flavor. Barlette pear is suitable for eating out of hand, desserts, and salads. Barlette pear is available from mid-summer to early winter. Handling Tip Selection Bartlett pear should be firm without any dark spots or blemishes. If the top of the fruit still feels firm, you should store the pear. The pear will continue to ripen. If it gives near the top of the pear, the fruit is ripe and ready to eat. If the pear feels soft anywhere else, the fruit is overripe. As bartlett pear ripens, the fruit turns yellow and produces a pleasant fruity fragrance. Storage Bartlett pear should be stored at 30°F (-1°C) with a relative humidity of ninety to ninety-four percent and no mist. The typical shelf life is two to three months. Bartlett pear is very sensitive to temperature. Storage at 32°F (0°C) is reported to shorten shelf life by thirty-five to forty percent. Higher temperatures enhance the development of dry texture and interior flavor. High humidity is also important to avoid shriveling. Bartlett pear is sensitive to odor. Do not store bartlett pear with strong aroma produces. Bartlett pear is sensitive to ethylene, a naturally occurring gas that regulates ripening. Bartlett pear should not be stored with high ethylene-producing products to extend shelf life. Unripe bartlett pear produces a low level of ethylene that increases drastically as the fruit ripens. Bartlett pear is moderately sensitive to chilling injury after prolonged cold storage. The symptom appears a few days after removing to room temperature as surface browning. Do not store Barlette pear below 29°F (-1.5°C) to prevent freezing injury. Freezing injury symptom includes water-soaked areas.
