~25 - 30 lbs Nai You Choy aka "Dwarf Bok Choy", "Nai-You-Cai", "奶油菜" Nai you choy has stubby curly leaves with off-white stalks. It has a mild flavor similar to chard and a crisp texture. Common application includes stir-fry, braise, soups, and stews. Handling Tip Selection The leaves have a uniform green color with no signs of yellowing or wilting. The stem is firm and moist with no brown spots. Storage Nai you choy should be stored at 34°F - 36°F (1°C - 2°C) with a relative humidity of ninety-five to a hundred percent. The typical shelf life is two to three weeks. Nai you choy is sensitive to ethylene, a naturally occurring gas that regulates ripening. Nai you choy should not be stored with high ethylene-producing products to extend shelf life and avoid yellowing. Nai you choy produces a low level of ethylene. Nai you choy is not sensitive to chilling injury and should be stored as cold as possible without freezing.
