Storage Yellow papaya should be stored at 34°F - 37°F (1°C - 3°C) with a relative humidity of ninety to ninety-five percent and no mist. The typical shelf life is less than seven days. Yellow papaya is not sensitive to ethylene, a naturally occurring gas that regulates ripening. Yellow papaya produces a high level of ethylene. Yellow papaya is sensitive to chilling injury.
