~25 - 30 lbs Small Bok Choy aka "Xiao-Bai-Cai", "小白菜" Small bok choy has oval-shaped green leaves with thin, long white stalks. It has a spinach-like taste with a very mild bitterness. Small bok choy is great for stir-fry, saute, and braise. Small bok choy is available year-round. Handling Tip Selection Small bok choy has firm stalks with no signs of brown spots. Small bok choy has bright green leaves with no bruises and is not wilted. Storage Small bok choy should be stored at 32°F - 41°F (0°C - 5°C) with relative humidity above ninety-five percent with mist. The typical shelf life is seven to ten days. Small bok choy is not sensitive to ethylene, a naturally occurring gas that regulates ripening, and produces a low amount of ethylene. Small bok choy is not sensitive to chilling injury and should be stored as cold as possible without freezing. Small bok choy freezes at 31°F (-0.5°C).
