~20 - 25 lbs Yu Choy Tip aka "You-Cai-Miao", "油菜苗" Yu choy tip is the baby form of yu choy with more tender leaves and stalks. It has green, oval-shaped leaves attached to thin, long green stalks. The taste is mildly sweet similar to baby spinach, with subtle bitter and peppery notes. Yu choy tip is great for stir-fry, sauté, and blanching with oyster sauce. Yu choy tip is available year-round. Handling Tip Selection Yu choy tips have a uniform green color with no signs of yellowing or wilting. The stem is firm and moist. Storage Yu choy tip should be stored at 34°F - 36°F (1°C - 2°C) with a relative humidity of ninety-five to a hundred percent and with mist. The typical shelf life is one to two weeks. Yu choy tip is sensitive to ethylene, a naturally occurring gas that regulates ripening.
