  Tasting Notes: Roasted Almonds, Dark Chocolate, Honey Grown By: Arabigos Finos de Nicaragua Region: Nueva Segovia, Nicaragua Altitude: 1,000 - 1,400 meters above sea level Process: Fully washed and dried in the sun Roast Level: Light-Medium Nicaragua Segovia Diamante coffee is a bold, adventurous coffee with a chocolatey richness with subtle notes of roasted almond and honey. It is wonderfully blended together by Arabigos Finos de Nicaragua using 38 different farms from Nueva Segovia. The coffee cherries are hand sorted, depulped, fermented, washed, and density sorted at each farm. The wet parchment is then transported to a drying facility for drying. The name "Diamante" represents the idea of a polished rock being transformed into a diamond.
