A staple in Spanish kitchens, known for its nutty flavor and creamy texture.  This isn’t the dusty, forgettable brown lentil you find in co-op bulk bins—it’s actually a Spanish treasure. Pardina lentils are traditionally used in all kinds of dishes in Spain, including Lentejas, a rustic stew that has become a national dish. Originally bred in the Pyrenees, it is now cultivated both in Spain and the United States. Ours come from the rolling hills of the Washington-Idaho border, renowned for excellent lentils.  Please note: These lentils were harvested on equipment shared with wheat. We are finding some wheat kernels mixed in with the lentils. If wheat is an allergen for you, we recommend avoiding this crop. As with all our crops, we recommend sorting and checking for organic debris, and rinsing well.
