One of the preferred types of rice for your perfect Paella. We've been playing around with paella in the Rancho Gordo kitchen and having a great time. So far, Calasparra rice has been the favorite, though bomba rice also works well and seems to be more widely available. Calasparra is a rice-producing region of Murcia, Spain, which has been granted a Designation of Origin for meeting very strict quality and production standards. When cooked, the round, short-grain rice absorbs more liquid than other varietals of white rice, making it ideal for paella dishes.
