Sunrise Lentil
This pale-hued lentil may look subtle, but its flavor is bright and unusual. This is a truly unique lentil. You'd think the skins had been removed, but really, they've been bred to have naturally low pigment in their skins, without being peeled or split. The result is a smooth, delicate lentil that cooks up much like a split red lentil, but with a more nuanced taste. These are grown in the rolling hills of the Washington-Idaho border, renowned for excellent lentils. We noticed they can cook a little unevenly compared with our other varieties, perhaps because of how they are harvested. Don’t be surprised if a few fall apart while others hold their shape. They shine in hearty soups and stews more than in salads. Please note: These lentils were harvested on equipment shared with wheat. We are finding some wheat kernels mixed in with the lentils. If wheat is an allergen for you, we recommend avoiding this crop. As with all our crops, we recommend sorting and checking for organic debris
