Tri-tip is a west coast phenomenon! It comes from the tip of the Bottom Sirloin and isn’t always offered in butcher shops east of the Rockies. It is fairly tender and flavorful and great on the grill. There are only two Tri-Tips per animal. Quick tip…cut it across the grain when slicing for improved tenderness.
