All producers here commit to leaving a portion of their farms as untouchable forest. They also leave native plants untouched in areas near local waterways, as well as keep livestock out of those areas.  This type of careful consideration to farming practices and the environment is something you can really taste in the final product. The coffee from Tablon de Gomez is incredibly sweet, and very clean. It's an ideal example of washed coffees from Nariño.  In the cup, we're tasting red apple, raspberry, and sugar cookie.
