By C. Cassis  Made from the byproduct of the signature C. Cassis aperitif, pressed currants are dehydrated and blended with sea salt. Great for drink rims, salads, or anywhere you want a bright umami pop of flavor + vibrant color. Salt curing pressed currants is one method that has become our favorite way to create a unique savory condiment which we have been using for a ton of different things.  Similar to the dry salt curing of olives practiced since Ancient Roman times.
