These farmers—many third- and fourth-generation—are stewards of both the environment and tradition, cultivating their harvests in harmony with the mountainous terrain and its protected national forest. The coffee is handpicked and washed on family-owned farms, then sun-dried or finished in mechanical dryers, depending on the microclimate.
