Cambodian mature peppercorn berries are picked slightly young and green. These are soft and juicy peppercorns, fermented in fleur de sel. They are NOT dried. They release an explosion of flavor and heat. Perfect pairing for beef (carpaccio, etc) and duck. Nice when slightly warmed. Keeps for up to a year at room temperature.
