I f it seems to be rising too fast, just pop it into the fridge until you are ready to use it - up to a few hours.Then stretch the dough to about 12 - 13 inches, top it & bake itI suggest putting the stretched dough onto a piece of parchment paper before topping it, this will make it easier to transfer onto the heated stone.You can use a pizza peal to load the pizza onto the stone or improvise with the back
