Grass-finished and non-GMO barley-finished beef each offer unique flavor profiles and benefits. + Our grass-finished cattle spend their entire lives on pasture, enjoying lush green grass during the spring, summer, and fall, and grass hay that we harvest ourselves and feed during the winter months. Grass-finished beef, raised on a diet of natural grasses for its entire life, tends to have a robust, earthy flavor with a leaner texture. + Similarly, our non-GMO barley-finished cattle also spend their entire lives grazing on lush pastures throughout the spring, summer, and fall, and are fed our own grass hay during winter. The key difference is that 30 days before processing, we move the designated barley-finished cattle to their own pasture, where they receive an additional 5 lbs of barley per day until they go to the butcher. Because these boxes are an eighth of an entire cow- the cuts and quantities will vary slightly but there will always be a minimum of 50Ibs or delicious, nutritious protein packed beef that you can feel confident feeding to your whole family. How it works: You reserve your 1/8 beef share today with a ($127) deposit. We continue to raise your beef on the best possible feed to ensure a healthy animal and flavorful beef until it's ready for harvest. Our USDA butcher will process your beef and let it dry age to maximize flavor & tenderness. Once your beef is ready, we will send you an invoice to collect the rest of the payment ($583). Then we will ship it to your door for free in one big box. Your beef will arrive fully frozen!  *Our spring shares are scheduled to be processed in June with a ship date in the first 2 weeks of July.
