Production Process- Agave Source: A blend of wild and semi-cultivated agaves, harvested at full maturity under the moon.- Roasting: Fire-roasted for 90 hours in a stone-lined earth pit using estate-sourced white oak. -Maceration & Fermentation: - Maceration: Immediately following roasting. - Fermentation: Conducted in open-air wooden vats for 120 hours.- Distillation: Double distilled using either a copper cazo and pinewood still or ancestrally in a clay pot still.
